BUTCHER – MEAT & FISH

Saverne   is a wood-fired modern brasserie from   Gabriel Kreuther , the celebrated chef of his two-Michelin-starred restaurant in Bryant Park. Opening this winter on the ground floor of   The Spiral   in Hudson Yards, Saverne draws inspiration from the historic town of Saverne in Alsace, celebrating live-fire cooking, open grills, and ingredient-driven cuisine in a refined yet approachable setting.

We are seeking an   experienced, highly skilled Butcher   with deep expertise in   whole-animal meat and fish fabrication   to join our opening   Back-of-House leadership team . This role is ideal for a craft-driven professional who respects the animal, understands yield, and takes pride in precision, sustainability, and consistency. Experience in   Michelin-starred or fine-dining kitchens is strongly preferred .

What We’re Looking For
  • 5+ years of professional butchery experience   in high-level kitchens

  • Proven expertise in   whole-animal meat fabrication  (beef, lamb, pork, poultry)

  • Strong experience in   whole-fish breakdown   and portioning

  • Fine-dining or Michelin-level experience strongly preferred

  • Deep understanding of yield optimization, cuts, aging, and storage

  • Knowledge of sustainable sourcing and responsible utilization

  • Ability to work cleanly, efficiently, and precisely in an open-kitchen environment

  • Calm, disciplined leadership presence and strong communication skills

Responsibilities
  • Break down whole animals and fish with precision and minimal waste

  • Prepare and portion cuts for service, live-fire cooking, and daily production

  • Maintain impeccable organization, labeling, and sanitation standards

  • Collaborate closely with chefs to support menu development and specials

  • Manage inventory, yields, and proper storage practices

  • Uphold safety, sanitation, and HACCP protocols at all times
